Owner

Chad Dillow

Our owner served in the US Navy before going into financial planning and eventually investment banking for 25 years. In 2017 he came out to Las Vegas to finance a deal in what was supposed to be a 3 month transaction and 3 years later had 4 companies in Vegas. Primal Steakhouse has become his passion because of the connections formed with patrons and staff. He has been honored by Apple News and Washington as a top business entrepreneur in the past 10 years and he is now proud to call Las Vegas home with his wife April and his daughter Alea currently at UC Berkeley.

Chief Operating Officer

Brandon Brooks

Brandon started his hospitality career with working as an intern at
the Kentucky Derby. After 3 years of being selected to work at
the Derby he was offered a job working for the Miami Heat down
in South Beach. It was an easy decision to take his talents down
south and to start using all his knowledge of the business and
trying to make an impact on other people’s lives. Brandon spent 8
years homing in on his craft in Miami working for a couple of
different high-end restaurants, but it was time for him to head
back to New York and finish what he started when he was
younger. He became General Manager of local Italian restaurant
and drove that business to being one the best in the capital
district.

With his dream to always end up in San Diego Brandon
decided to take another chance on himself and picked up and
moved to Las Vegas one step closer to that dream. He was
presented with an opportunity to help grow a new restaurant
called Primal and 4 years later he continues to do everything he
can to make this restaurant successful. His Philosophy that
drives him each day is to take care of his team, and they will take
care of the establishment. Creating a family culture with his staff
and a Cheers culture with the guests of the restaurant are pieces
that make him who he is today.

General Manager

Jhovanny Casillas

Hospitality is a career that chose me, despite my original plans of Military and college. From humble beginnings in fast food like McDonald’s, to the pinnacle of what food and beverage has to offer on the Las Vegas Strip, every single job has taught me something valuable that I still practice and mentor to this day. It was this wisdom that opened my eyes to opportunity when it finally arrived in the form of Primal Steakhouse. I’ve always had a compulsion to be the best and excel at whatever it is that lies before me. All the years of learning customer service, how to adapt to all range of personalities, all the spirits training and seminars, finally culminating into the greatest test of all.

Am I meant for more…? Being at Primal for a chance to build an empire has been among the most fulfilling endeavors I have ever done. To witness the growth of unsuspecting talents coming together to create memories and truly hone in on genuine interactions with guests and each other has been liberating. I have never witnessed nor been a part of a better team than the one we have today. My goal is to make this the industry standard everywhere, where work doesn’t feel like a chore but an activity you look forward to doing. Cheers!

Front of House Manager

Taylor Kidney

Taylor, aka Tiny, started his hospitality career working for an attraction experience in Las Vegas, where he was nominated for the Las Vegas’ Hospitality Hero Award in 2021. Here, he fell in love with delivering excellent customer experiences. After five years, he decided to look for new opportunities that would allow for more growth in his career.

Tiny began working as a Lead at Rex Center Las Vegas, which is a little sister company to Primal Steakhouse. It was here that, the General Manager of both Rex Center and Primal Steakhouse, saw leadership potential in Tiny. Tiny was promoted to Manager of Rex Center in just two months. After fourteen months of honing his leadership skills within Rex Center Las Vegas, Tiny was offered an assistant manager role at Primal Steakhouse, which he gladly accepted. Tiny strives to support his team to be greater every day and to give his guests the best possible experience.
